Corn Casserole Yumminess

A bitch adores this stuff...points and calories be damned!

ABB's Corn Casserole Yumminess...
1 can whole kernel corn, drained
1 can creamed corn2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 c. oil)
1 c. sour cream
1/4 - 1/2 tsp. garlic powder (opt.)
Shredded cheese (opt.)

Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9"x13" baking dish for 30 to 45 minutes or until fully cooked in center.

Yum!

So does it come out pudding like or more like a bread pudding? Sounds delish! My great aunt used to make something like that, and unfortunately when she passed on, she never passed on her recipe.

Hey, any recipe that calls for an entire stick of buttah.... oh lordy... has got to be good!!!

Actually you have control over whether it comes out puddingesque or more solid! That's the best part.

If you like pudding...follow the directions to the letter.

If you want it more firm you can add an extra 1/2 bag of Jiffy.

My gramma used to maike it -- she called it corn pudding! We still make it every Thanksgiving!

We call it corn pudding, too! Ma's recipe has self-rising flour instead of the Jiffy cornbread.
