1 Box Lemon or Lime Gelatin (sugar free)
8 oz sour cream
1 Lemon or Lime, Juice & zest
1 tsp. Vanilla
1 C. Boiling water
1 C. Grated unsweetened coconut**optional
In a bowl dissolve gelatin in water. Then add whipped cream, lemon juice and vanilla.Let set in fridge for 20 minutes. Whisk gelatin mixture and then add in lemon zest. Pour into serving dish and set in fridge over night.
