1 can (540 mL/19 oz) black beans, rinsed and drained
1 mango, peeled, pit removed and diced
1 sweet red bell pepper, diced
2 green onions, sliced
1/4 cup fresh lime juice
1 tbsp vegetable oil
1 tbsp soy sauce
1/2 tsp red pepper flakes
2 tbsp chopped fresh cilantro
In a medium bowl, combine beans, mango, red pepper and green onions.
Whisk together lime jice, vegetable oil, soy sauce, and red pepper flakes.
Pour over bean mixture and toss.
Add the cilantro and toss lightly.
Makes 4-6 servings
